Sol Granola

A grounding, nutrient-rich blend made with love from the Samaya Sol kitchen.

This granola was born from a desire to create something nourishing, vibrant, and full of warmth—something that reflects the essence of my kitchen, my teachings, and my love for wholefoods.

It’s crunchy, earthy, lightly sweetened, and infused with citrus, spice, and intention. It’s the kind of granola that makes you feel good—whether sprinkled over coconut yogurt, poured into a bowl with your favorite milk, or simply eaten by the handful as a sol snack.

Ingredients

This recipe makes a large batch (about 6–8 cups). Adjust to suit your needs.

Before roasting:

  • 3 cups jumbo rolled oats

  • ½ cup buckwheat groats

  • ½ cup chopped almonds

  • ½ cup chopped cashews

  • ½ cup chopped walnuts

  • ¼ cup pumpkin seeds

  • ¼ cup sunflower seeds

  • ¼ cup melted coconut oil

  • ⅓ cup maple syrup

  • Zest of 1 orange

  • 1 tsp ground ginger

  • 1 tsp cinnamon

  • Pinch of sea salt

After roasting (once cooled):

  • ¼ cup cacao nibs

  • ¼ cup dried cranberries

  • ¼ cup dried cherries

  • 2 tbsp dried hawthorn berries (optional, for heart energy)

Instructions

  1. Preheat your oven to 160°C (320°F) and line a baking tray with parchment paper.

  2. Mix all dry ingredients (except post-roast additions) in a large bowl.

  3. Add the melted coconut oil, maple syrup, orange zest, and spices. Stir well to coat evenly.

  4. Spread onto the tray in an even layer and bake for 20–25 minutes, stirring halfway through, until golden and fragrant.

  5. Cool completely, then stir in the cacao nibs and dried fruit.

  6. Store in an airtight jar or tin for up to 2 weeks (if it lasts that long!).

This granola isn’t just a recipe—it’s a ritual. From the grounding act of mixing with your hands to the comforting scent that fills the kitchen, it's an invitation to slow down, connect, and nourish yourself intentionally.

It also makes a thoughtful gift—simply pour into a glass jar, tie with twine, and add a little handwritten tag.
